2 Courgettes
1 Small Red Onion
Coriander (to sprinkle)
2 Slices of Ham (or small bacon)
1 Egg
500ml of Milk
70g of Flour
60g of Fresh Cream
2-3 Tablespoons of Grated Parmesan Cheese
Salt & Pepper (for seasoning)
1) Grab your courgettes and red onion and cut them into small/medium pieces
2) Grab a mixing bowl and add your courgettes, red onion, coriander, ham (in pieces) or bacon and mix
3) Add in your egg, milk, flour, cream, and grated parmesan and mix again
4) Sprinkle some salt and pepper and then pour your mix into a cupcake tin
5) Cook your courgette cupcakes for around 20 minutes at 180 degrees celsius
6) Serve hot or cold with a side
